I was reading some things though about agave nectar that have given me slight pause and I wanted to get your feedback on it. From Wikipedia on agave nectar: 'Agave syrup consists primarily of fructose and glucose. One source gives 92% fructose and 8% glucose; another gives 56% fructose and 20% glucose. These differences presumably reflect variation from one vendor of agave syrup to another. There is significant concern about the health effects of fructose, since Agave has a fructose content much higher than high-fructose corn syrup. Is this the main sweetener of your bars or does it play a smaller role than that? Also, do you know the percentage of fructose that your source of agave contains? Read Answer.
